Artichoke Pie

Ingredients

  • 12 artichokes
  • one onion
  • parmesan cheese
  • 6 eggs
  • puff pastry

Preparation

Take the artichokes, remove the hard leaves and the thorny tips, then slice them and place them in fresh water with a few lemon slices. In a saucepan with a little butter and oil, brown the finely chopped onion and a little parsley. Drain the artichokes and add them to the browned onion. Cook them slowly, stirring frequently. Meanwhile, prepare a puff pastry as for Pasqualina pie. When the artichokes are cooked, remove them from the heat and let them cool, then add grated parmesan cheese, salt, pepper and the eggs, mix well and spread on the pastry; cover everything with more pastry sheets, and bake in the oven at 180°.
